This summer, with the scorching heat at its peak, I embarked on a journey to create a delicious and healthy treat - Kulfi made from Nutreat Kurukku.
Why Kurukku?

Made from sprouted ragi, sprouted cow peas, almonds, cashews, and mishri, it’s a blend that promises wholesome goodness in every bite. Ragi is rich in calcium and iron, sprouted cow peas boost protein and fiber, and the nuts add a creamy texture along with essential vitamins and minerals. Mishri, a natural sweetener, gives a touch of sweetness without the health risks of refined sugar.
The Recipe
Here's how I crafted this delightful Kulfi:
Ingredients:
- 1/4th cup Nutreat Kurukku (K-Square)
- 2 cups milk (or any plant-based milk for a vegan version)
- 1/4 teaspoon cardamom powder
- A handful of chopped nuts (almonds, cashews)
- A few saffron strands (optional)
Instructions:
1. Prepare the Base: In a thick-bottomed pan, bring the milk to a boil. Add Nutreat Kurukku and cook on low heat, stirring continuously to avoid lumps. Let it simmer until the mixture thickens.
2. Sweeten the Deal: If you prefer a different sweetener, adjust the quantity to your taste with 2 tbs of sweetener of your choice.
3. Flavor Burst: Stir in the cardamom powder and saffron strands for an aromatic touch. Mix well.
4.Cool and Pour: Let the mixture cool slightly. Pour it into kulfi molds or small cups. Insert wooden sticks if you’re using cups.
5. Freeze: Place the molds in the freezer for at least 6-8 hours, or until fully set.
6. Garnish and Serve: Once set, demold the kulfis. Garnish with chopped nuts for an extra crunch.
